Edamamé soy beans salad with colourful vegetables

• 1 can Rapunzel soy beans Edamamé
• 1 red pepper, finely chopped
• 1 small zucchini, finely chopped
• 1 shallot, diced
• 1 glove of garlic, minced

• 2 tbs Rapunzel olive oil Finca la Torre
• 2 tbs Rapunzel vinegar Condimento Bianco
• 2 tbs mustard, medium-hot
• Rapunzel herb salt
• pepper, freshly ground
• ½ tbs Rapunzel coconut blossom sugar
• fresh herbs if desired
